Join The Mora as Chief Steward responsible for the efficient operation of all food & beverage sanitation, to include outlets, lounges, banquets, pastry shops, employee cafeteria, all kitchen food preparation areas, dry and wet garbage rooms, and the cleanliness of the loading bay. 

The Chief Steward reports to the Executive Chef and Food & Beverage Director.

ABOUT THE JOB

  • Lead, mentor, and manage the kitchen stewarding team, including dishwashers, pot washers, and cleaners.
  • Sets clear expectations and provides feedback to the team.
  • Ensures impeccable sanitation in kitchen and storage areas.
  • Enforces health and safety protocols and food safety standards.
  • Manages inventory of cleaning supplies and kitchen equipment.
  • Controls inventory costs within budget constraints.
  • Reports equipment malfunctions for repair.
  • Develops waste reduction and recycling programs.
  • Monitors and controls waste disposal costs.
  • Inspects and approves cleaned dishes and utensils for quality.
  • Collaborates with the executive chef and kitchen staff.
  • Provides ongoing training and development for the team.
  • Manages departmental budget and controls costs.
  • Maintains compliance with local regulations and records.
  • Oversees sanitation, cleanliness, and hygiene.
  • Supervises stewarding department employees.
  • Manages inventory and labor costs.
  • Ensures equipment is in working order.
  • Enforces operational standards and employee management.
  • Promotes teamwork, safety, and asset management.

  • Regular quality inspections and staff monitoring.
  • Ensures departmental organization and cleanliness, conducts shifts, and participates in F&B communication meetings for motivation and celebration.
