Four Seasons Serengeti is currently seeking a highly competent and motivated individual to join our team as the Assistant Outlet Manager. This is a key leadership position responsible for overseeing all Food & Beverage operations at our luxury safari lodge, providing guidance, and driving the financial success of our property.

Essential Functions:

  • This document outlines the key responsibilities and expectations for managing dining outlets in a lodge setting. The role includes:
  • Selecting, evaluating, leading, and motivating servers, bar staff, and captains to ensure high standards of service. Coaching and disciplining employees when necessary.
  • Being visible, providing recognition, handling guest complaints, and ensuring special requests are met.
  • Ensuring the quality of food and beverages, including expert knowledge of wine and spirits, while maintaining a high-end dining experience.
  • Working with the Assistant Director of Food & Beverage, chefs, and other managers to design menus, control costs, and maintain product quality.
  • Managing labor, operating expenses, scheduling, budgeting, purchasing, and inventory.
  • Observing and recommending improvements to the physical condition of the facilities.
  • Adhering to company policies and work rules, maintaining professional relationships, and upholding grooming standards.
  • Preparing training calendars, conducting regular employee training, and coordinating vacations.
  • Participating in various departmental and environmental meetings.
  • Reviewing upcoming guest arrivals, ensuring cleanliness and organization in dining areas, managing tools and supplies, and completing assigned projects in a timely manner.
  • Utilizing internal systems like Delphi and ensuring proper key handling. 
  • The role is focused on maintaining service excellence, operational efficiency, and a high standard of guest experience.
